Sorry for the late follow-up on this matter...
I finally found the data I was originally looking for on FSUIPC's site.
Adding "ProvideAIdata=No" to the FSUIPC7.ini file seems to fix any issues with CTD while going into populated areas, or performing a flight longer than 2 hours.
The details are all in the forum link below, but the long and short of it seems to be that Simconnect gets clogged up by the cache of AI aircraft while in the sim which then causes MSFS to crash.
After editing the .ini file, I reverted to standard graphics settings, traffic settings, and have had no issues since.
Thought this would be helpful for anyone else who may run into this in the future.
